The film tells about the recently instituted course for Kitchen Services Operator, an alternative to the Catering college. Financed by the European Economic Community, it also includes a training course for disabled teenagers. The production of Competenze spendibili originated from the idea of an "artistic" performance applied to visual antropology. The directors were to spend the first week observing, the second recording, the third week sifting through the recorded material and the last week editing, but the whole process evolved instead following its own schedule. The directors have decided to extend the four stages to gather more material. Their view is apparently unbiased and they keep a low profile. Conflicts are not highlighted, but the attention to details and shades contribute to tell extraordinary stories.
